Zeppole “is zippuas”

Mi sono accorta che tra poco più di dieci giorni carnevale sarà archiviato, e io ho ancora un bel po’ di ricette a tema da postare. Oggi voglio condividere con voi un dolce tipico di carnevale: le zeppole “is zippuas” in dialetto sardo. Ogni regione del sud Italia così come ogni parte della Sardegna, ha la sua versione e naturalmente quella che vi presento oggi è quella sarda, is zippuas appunto. Le zeppole sono delle deliziose frittelle che dopo essere state scolate dall’olio, vengono fatte rotolare nello zucchero semolato e mangiate calde. Per fare queste frittelle vi occorrerà:

  • 1 kg di farina “00”
  • 3 uova freschissime
  • 500 ml di latte
  • 1 bustina di zafferano
  • 50 g di lievito di birra fresco
  • 2 arance
  • 1 bicchierino di acquavite
  • 1 limone
  • 1 patata media lessa

Setacciare la farina in una terrina capiente, praticare un foro al centro e aggiungere la patata lessata e schiacciata. Scaldare circa la metà della quantità di latte occorrente (deve essere tiepido) e cominciare ad impastare.Aggiungere la scorza grattugiata del limone e delle arance, poi il succo di queste ultime, lavorare sino ad ottenere un impasto liscio e consistente. Trasferire l’impasto sul tavolo e lavorarlo energicamente, ora incorporare sempre lavorando le uova uno alla volta.Lavorare l’impasto per circa un’ora con molta energia. Rimettere l’impasto nella terrina pulita. Sciogliere il lievito nella rimanenza del latte tiepido e unirlo all’impasto assieme al liquore e allo zafferano. Lavorare ancora un po’, poi mettere a lievitare l’impasto coperto in un luogo tiepido al riparo da correnti d’aria. L’impasto deve raddoppiare il suo volume. Quando tutto è pronto (ci vorranno circa due ore),inumiditevi le mani nel latte e prendendo dei piccoli pezzi d’impasto formate delle ciambelline che tufferete nell’olio ben caldo. Friggetele da ambo le parti per alcuni minuti fino a che saranno dorate. Scolatele dall’olio e fatele rotolare nello zucchero semolato, mangiatele calde. Buon Appetito!

Zeppole- Is Zippuasa




A zeppola is a pastry typical of peninsular italian cuisine. Every region of southern Italy has its own way to make zeppole; in Sardinia zeppole are called (is) zippuasa and are usually eaten during Carnival days. Sardinian zeppole come in the shape of doughnuts, and are extremely puffy and light...The first thing you notice about Zippuasa is their wonderful flavour and the way they smell...heavenly!
But now, the recipe! I warn you, it's a little bit long...and it's not too easy, but with some practice, you will manage to have perfect Zeppole :) This is one of the easiest recipes I have found!

Ingredients:
  • 1 kg flour
  • 3 eggs
  • 1/2 lt milk
  • 1 bag of saffron
  • 50 g brewer's yeast
  • 2 oranges
  • 1/2 glass of brandy
  • 1 lemon
  • 1 potato
How to make it:

Boil the potato, peel it and mash it in a bowl and add the flour. Warm milk and pour it in the bowl, and mix it with the mashed potato and the flour. Add lemon and oranges' zests, and also oranges juice. Keep mixing and start kneading the mixture until you get a soft and thick dough.
Put the dough on the table or a large work surface and energetically knead it, gradually adding the eggs one per time. Knead the dough for about one hour. Then place it again in the bowl. Melt yeast in a cup with some warm milk and add it to the dough along with brandy and saffron. Knead for some more time and then, let it rise. When the dough looks twice bigger than it was, you know that it's ready. 
Once it's ready, dip your hands in milk and take small bits off of the dough, shape them into rings and fry them in deep oil. Roll them in caster or powdered sugar. Serve them warm...Enjoy!
